today...

Today, we...

drew many, many cars,


feasted on raw cheddar frittata and asparagus,


played in the dirt,


watched a bee doing his work,


blew a wish into dandelion seeds.



Raw Cheddar Frittata

5 eggs
3 med. potatoes, peeled and diced
1 large onion, chopped
1/4 cup milk
2-3 tbsp olive oil
1-2 oz (or more) raw cheddar
salt and pepper to taste

In a frying pan (I like to use cast iron), pan fry the chopped onion and diced potatoes in olive oil until they begin to brown slightly. In the meantime, whisk together the eggs, milk, salt and pepper. Place the potato and onion mixture in an oven safe dish, the pour the egg mixture on top. Place finely sliced, or shredded, raw cheddar on top of mixture and bake for 35-45 min at 350.


Asparagus (à la my brother)

1 bunch of asparagus, trimmed
2 tbsp olive oil
1/2 lemon
1-2 pinches celtic sea salt

Pan fry asparagus over medium heat in olive oil until the spears begin to brown slightly. Place on plate and juice the lemon over asparagus then sprinkle with celtic sea salt. Couldn't be easier or more delicious!

  3. what camera did you get? I think mine stopped working today, for some reason when I press the button to take a photo it just doesn't work. So sad. I love my camera! It's a Canon Rebel xsi.
