::Avocado-Banana Muffins::

1 3/4 cup spelt flour
1/2 cup rolled oats
2/3 cup turbinado sugar
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
2 bananas, mashed
1 med avocado, mashed
1/4 cup coconut oil
2 eggs
1 cup chocolate chips, optional

Mix all ingredients until blended. Place in muffin cups and bake at 350 for 20-25 min. Makes 12 muffins (unless you add chocolate chips, then we also got 5 mini muffins in addition to the 12 regular muffins).

  1. We just made muffins yesterday--- I haven't seen this recipe though, it looks amazing. Love all of your photos, your boy looks so sweet and that clover is magic!

    Hmm I wonder if I could make those ommiting the eggs, seems like the avocado would help replace them.... must think about this! I love you enjoying the now :)

  7. Man! I meant to check the library the other day to see if they had some Berger books (very small library). I love her, we own a couple of books and LOVE them. Gwinna looks particularly nice.
