::in the kitchen::
Finn's favorite muffins: Banana-Almond Butter-Oatmeal, some with chocolate chips for Elizabeth


Banana-Almond Butter-Oatmeal Muffins

2 cups flour (generally 1/2 WW, 1/2 white)
1 cup quick-cooking oats
1/2 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
1/3 cup almond butter
2 eggs
1/3 cup vegetable (or coconut) oil
2-3 tsp raw (coarse) sugar

Mix all ingredients, except raw sugar, together and divide into 12 muffin cups. Sprinkle raw sugar on top of muffin batter. Bake at 350 for 17-20 min.

another hat for Elizabeth--this time actually the one. The last one came out a bit small. How do I know that it's too small considering this is a surprise gift for her? I tried it on her in her sleep the other night. :)
