back to the grind

I came home to a garden bursting with veggies. What you can't see: the 5 lb zucchini monstrosity that was ignored until I returned.


I sure wish these tomatoes would ripen soon!


The blackberries were in full swing when I returned. I made a few jars of blackberry jam and promised Elizabeth she could help me make more this weekend.


We also made blackberry jam muffins.

Blackberry Jam Muffins (aka Purple People Eater Muffins)

1 cup crushed blackberries (I put them through the food processor & you can strain them if you don't want the seeds)
1 cup whole wheat flour
1 cup quick oats
1 tbsp baking powder
1/3 cup raw sugar
1/3 cup honey
1/3 cup coconut oil
3 eggs

Mix all ingredients together until just blended. Fill 12 muffin cups. Bake at 350 for 18-20 minutes.


Then with the huge zuke, I made Zucchini Chocolate Chip cookies. They were a hit! I think the kids particularly liked the fact they could see the zucchini but not taste it in the cookies.


Finn clearly enjoyed his cookies!


Paulie and Elizabeth discovered the ripening blueberries from our scrawny little blueberry bush. Note to self: one year soon we must decide to love this bush to good health.


Paulie thought he could hold Elizabeth's hair, making her look like a gnome. He even asked if I'd erase him in photoshop. :)


And Finn found some rain water to bathe his cars.


Yep, we are certainly getting back into the swing of our summer.

  1. When zucchini comes in full force I am making zucchini cookies...they've been calling my name for a while but I discovered a recipe for them AFTER zucchini season last year.

  6. those muffins look so yummy:-) Love zucchinni, makes great bread and freezes great for future use. My tomatoes took a while to get red, now they are all turning- of course-:-)

  7. Oh, yum. We want to pick blackberries at a friends property but mosquitoes have been insane. Maybe soon...my tomatoes are not yet very ripe yet (but soon!), but nowhere near having cukes. :)
