Pudding Pops

Just what everyone desires during the coldest month of the year...pudding popsicles!  Oh wait, that's just what Elizabeth desires.  We occasionally make pudding from scratch, one of Elizabeth's favorite treats.  This weekend, she decided that it would be more fun to eat them frozen.

Chocolate Pudding from scratch

1/3 cup turbinado sugar
2 1/2 cups milk
3 tbsp cornstarch
3 tbsp cocoa powder
1/4 tsp salt

Mix all of the ingredients together until mostly blended. (The cocoa powder will have a hard time completely dissolving until the heat is turned on.)


Turn the heat on medium and continue stirring until cocoa powder is completely dissolved.  Keep stirring so the pudding doesn't burn on bottom!


Remove from the stove when the mixture thickens into pudding-like consistency.  Let cool, stirring every minute or so to prevent thick skin from forming on top of pudding.


Pour into popsicle containers and freeze for several hours.

  2. Oh hard choice. Warm pudding; which I recently learned that I like, or pudding pops; which I always knew I liked. LOL! Yum either way. I must try this out one day soon.

  3. We made this pudding today! So yummy and so easy! To make it easier for me to work together with a 3-year-old, I measured everything out and let her pour it in for me. We had fun, and it was cool enough just in time for dessert. Thanks for the inspiration. I'll call ya tomorrow. ;)
